I always like to find new ways to add vegetables and fruits to my meals. Especially now that my son is entering a stage where he wants nothing to do with the vegetables that I put on his plate. I now have to find ways to add the vegetables to our meals, so that he doesn't notice them or they are combined into the meal.
When Del Monte asked if I would make a recipe using their canned fruits or vegetables as part of their "Add Some Garden" campaign and contest, I knew this was perfect. I really like Del Monte's campaign of encouraging the addition of fruits and vegetables to meals. I like how their canned fruits and vegetables taste fresh and contain the same nutrients as fresh fruit and vegetables.
Del Monte fruits and vegetables are grown in the best growing regions of the United States, providing consumers with a consistently quality product. Also, the majority of Del Monte products are picked at the peak of ripeness and canned on the same day, to ensure nutrients and flavor are locked in.

During these phases, fans will have five days to submit their best tips, and consumers will be able to vote for their favorite tip during the second week of each phase. The five winning tips for each phase will then go head-to-head for a chance to win a Grand Prize culinary travel adventure, valued at $10,000, which will be announced February 15th.
I really like this idea of adding some garden to every meal. Here are some of my tips to add some garden to your meals:
- Make a casserole using vegetables - Add vegetables to pasta - Add vegetables to rice- Add vegetables to salad- Add almonds or other toppings to your vegetables (for example, adding almonds to green beans)- Combine vegetables to come up with different varieties- Make the fruit and vegetables fun! - Make a fruit salad - Add some fruit to your ice cream or dessert- Make a yummy sauce for the fruits or vegetables - Make the vegetables or fruit as a side dish
Since it is the tomato phase of the "Add Some Garden" Contest, I decided to make something using Del Monte Diced Tomatoes.

These tomatoes were really good. They tasted more fresh than other varieties of canned Diced Tomatoes that I have used. I like using the canned Diced Tomatoes as it is easier and I can always make sure to have some in the house. Del Monte also sells Diced Tomatoes that include spices.

I used the Del Monte Diced Tomatoes to make a favorite meal of ours, Rice with Shrimp and Tomatoes. This meal is so easy to make! We have been making this since the beginning of our marriage. One night we went over to my parent's house for dinner and they served us this delicious dish. I had to know the recipe, and I was surprised to know how easy it was to make.
My dad is a really good cook, he doesn't cook often, but when he does it is always fantastic. My dad actually is the one that taught my mom how to cook. My dad came up with this recipe, that includes a package of instant rice, shrimp, diced tomatoes, and seasoning.
This meal takes about 10-15 minutes to make and it tastes like it took much longer. We have made this for company before and everyone loved it. This was the first time we made it for my son and he loved it too! His favorite part was actually the tomatoes. I had to give him all the diced tomatoes from my plate, because he kept asking for more!

Easy Rice with Shrimp and Tomatoes
1/4 cup extra virgin olive oil 1 package, 5.4 ounces Herb & Butter instant rice (can use other flavors) 1 lb large shrimp1 can (14.5 ounces) Diced Tomatoes2 cloves garlic, minced1/2 teaspoon Italian Seasoning1/8 teaspoon basil1/8 teaspoon parsley
1. Make the Herb and Butter rice according to the package directions.
2. Meanwhile, heat the extra virgin olive oil on medium heat in a medium-sized skillet. Once it is heated and begins to bubble add the garlic and cook for about 2-3 minutes.
3. Then add the shrimp into the olive oil. Cook the shrimp until they are pink on both sides.
4. Once the shrimp is cooked add the Diced Tomatoes, the Italian Seasoning, basil, and parsley and cook until the Diced Tomatoes and sauce are heated.
5. Once the rice is done add the shrimp and tomato mixture on top of the rice and mix together. Let sit for 5 minutes before serving so that the rice can soak up some of the sauce.
