
This week is the first week of football. My husband is a big Philadelphia Eagles fan and we are both happy for football to start. Yesterday we met up with some friends and did a fantasy football draft. I like doing fantasy football because I pay more attention to all of the games and its fun to watch all the games and root for our particular players.
While I love watching football, my favorite part of football is the food. I love making a bunch of appetizers to have with the game. These Baked Mozzarella Bites are a perfect appetizer for a party or for watching a football game. These are essentially baked mini mozzarella sticks and are really easy to make. They are so delicious and healthy as well and can also be made as a snack. I can't wait to make these to watch the start of the football season this week!

Baked Mozzarella Bites(Recipe adapted from My Recipes)
1/3 cup panko3 sticks low fat mozzarella cheese 3 tablespoons egg beaters or egg substituteMarinara Sauce
1. Preheat the oven to 425 degrees.
2. Heat a skillet over medium heat. Add the panko to the skillet and cook for 2 minutes or until toasted, stirring frequently. Remove from the heat and place the panko in a bowl. Place the egg substitute in another bowl.
3. Cut the mozzarella sticks into 1 inch pieces. Dip the 1 inch pieces into the egg substitute and then into the panko. Place the cheese onto a greased cookie sheet. Repeat with all the pieces.
4. Bake for 3 minutes or until the cheese is softened and heated. Serve with marinara sauce.
