
Last week I posted about my favorite protein powder and this week I bring you the basic protein bar recipe I use it in- the protein bar recipe that rocked my world, that my family eats daily and which brings smiles to the faces of my friends, family and my co-workers (including my boss!) when I make these bars for them. My daughter begs for a piece of mommy’s protein bar constantly! I have had many people encouraging me to look into marketing these bars, which I did. It was a very interesting and enlightening process, but I decided against it- too much going on in my life already working full time, being a mom, blogging etc. etc... to venture into the stressful and competitive food market, especially that of energy bars! So instead I am finally deciding to share this recipe which I have held onto for almost a year and I hope many of you will make it and love it! It’s no bake and very easy and I strongly recommend using the unflavored Isopure (or other unflavored protein powder) because this is the only one I ever use and it works beautifully. I also have created many different variations of this bar which I will be posting in the future so if you like these bars you are in for a treat, or I should say many more treats coming up! Of all my flavors, this is the first recipe that started it all and I am excited to post it for you- enjoy!
Ingredients:
½ cup creamy or crunchy unsalted natural almond butter (I used Trader Joes Raw Unsalted Crunchy)
¼ cup pure maple syrup
½ teaspoon vanilla extract
½ cup oats (old fashioned, not quick, use a gluten-free oats such as Bob's Red Mill if you are on a gluten-free diet)
1.5 scoops of protein powder, preferably unflavored (the average scoop is about 4 tablespoons or ¼ cup, 25-30 Grams, so 1.5 scoops would be approx. 6 tablespoons)*
4 tablespoons raisins
Wax or parchment paper
Directions:
In a medium sized bowl, combine the maple syrup, vanilla, cinnamon and almond butter and mix well. Stir in the oats, protein powder and raisins and mix some more. Press mixture into an 8 by 8 inch pan. (Lining the pan with a large rectangular piece of parchment paper, placing the mixture on one side and then folding the paper over to press down works nicely since the dough is so sticky.) Chill in the fridge for an hour or more (if you can wait that long!) and cut into 8 bars and serve. Wrapping the individual bars in wax paper and storing in baggies is great for convenience. Store in the fridge. These bars also freeze well!
* I have had great success with using Nature’s Best Isopure Perfect NaturalProtein Powder, unflavored- it is gluten-free, lactose free
