Sausage and Vodka Sauce Pizza

 I work outside of the home and I am not usually home until 5:30 or 6:00.  My husband is a teacher so he gets off a little earlier, but he has to pick my son up from daycare and take care of him.  By that time everyone is hungry and I am not in the mood to spend a long time making dinner, I'm already exhausted.  
This leaves us with a few options.  One option is that my husband makes dinner, as long as my 1 year old is cooperating.  This means that the dinner needs to be something easy, so that he can make it while dealing with a fussy and hungry 1 year old and because, while my husband does a good job cooking, he can't really do anything difficult and needs a recipe to follow.  Another option is that we make dinner once I come home.  At this point I really don't want to make anything too hard as I am hungry, tired, and I want to spend as much time with my son as possible before he goes to bed.  The third option is that we go out to eat or get take out.
I don't like eating out all the time as it gets costly and isn't as healthy. I don't think dinner should be a chore, it should be something fast and easy so that I can spend more time with my family while eating a great meal and then enjoy the evening afterwards.   That means for weeknights I need easy meals.  That is what I really like about this Sausage and Vodka Sauce Pizza is that it is easy to make and it tastes great.  I decided to take one of my favorite pastas, Sausage with Penne and Vodka Sauce and turned it into a pizza. 

This pizza was fantastic, it reminded me of a specialty pizza that you can get at a pizza place.  I also love that it was easy to make.  I used refrigerated pizza crust to make it easier.  Also, the sausage can be browned in the stove or it can be made in the oven, which takes longer.  Another option is to make the sausage beforehand so that it is all ready to go for dinner or use leftover sausage.  I think I know what we are having for dinner tomorrow!

Sausage and Vodka Sauce Pizza
1 refrigerated pizza crust1 cup smoked sausage, cubed (can brown in the oven for 20-25 minutes or cook in a skillet over medium heat)3/4 cup Vodka Sauce1 1/2 cups shredded mozzarella cheeseParsley (optional)
1.  Preheat oven to 425 degrees.
2. Spread out the refrigerated pizza dough on a pizza stone or round pizza pan.  Cook the pizza crust for 8 minutes before putting any toppings on.  This allows the dough to get a little more crispy.
4.   Take the pizza crust out of the oven and spread the vodka sauce over the whole pizza, leaving a little bit of crust on the sides.  Next, sprinkle the sausage evenly over the vodka sauce.  Then sprinkle the mozzarella cheese over the pizza, covering the vodka sauce and sausage.  
5.  Cook for 6-10 minutes until the cheese is bubbly and melted. Before serving, sprinkle parsley over the top of the pizza.
