I can't believe that Thanksgiving is almost here! Thanksgiving is one of my favorite holidays, but I guess that shouldn't surprise anyone, as it includes food. I'm not the biggest fan of turkey, so my favorite part of dinner is all of the side dishes. Potatoes are always a staple on our Thanksgiving table.
These Potato Stacks are really easy to make and are also look great on a table setting. These would be great for a Thanksgiving dinner or as a side dish at a regular meal. This recipe makes 6 potato stacks, but it can be doubled or tripled if needed. I thought these potatoes tasted really good, they were so tender. I think these would make a great addition to your Thanksgiving menu!

Potato Stacks(Recipe adapted from Martha Stewart)(Makes 6 potato stacks)
2 medium Russett potatoesSalt and ground pepper6 tablespoons heavy cream
1. Preheat the oven to 400 degrees.
2. Thinly slice each potato. Place 2 pieces in each cup of a greased muffin pan. Season the 2 slices with salt and pepper. Continue to add potato slices, seasoning every couple of slices. Add the potato slices until the muffin cups are filled.
3. Pour 1 tablespoon of cream over each potato stack. Bake the potato stacks for 30-35 minutes are until the potatoes are golden brown and tender.
4. To take out of the pan, run a knife around each potato stack. Then place a plate over the muffin pan and invert to release the potato stacks. If desired, you can add some cheese to the top of the potatoes once they come out of the oven.
