Crockpot Bacon Cheeseburger Soup

I am a big soup fan, especially in the winter.  Lately, we have been getting soup at Wegmans every Sunday for dinner.  Wegmans always has really good and sometimes fancy soups.  However, going to get soup every week can get expensive and it is much cheaper to make our own.
My husband first introduced me to Cheeseburger Soup a few years ago and we are both big fans. I don't use my crockpot a lot, but I decided to make this soup in the Crockpot.  I love that you can just put the ingredients in the crockpot before work and then have dinner ready in the evening.  I really don't know why I don't use my crockpot more, it is so easy. 
This soup was so good and cheesy.  I really liked the flavor of the soup with the ground meat and bacon.  I used ground turkey meat instead of ground beef, but you could use either.  This soup is so easy to make and it is always great to walk in the house from your busy day with dinner made. I hope that you enjoy this easy and delicious soup.

Crockpot Bacon Cheeseburger Soup
1 pound ground turkey (can substitute ground beef), browned on the stove top and drained3/4 pound thick bacon (about 9 slices), chopped and cooked1 can (14 ounces) diced potatoes2 garlic cloves, minced4 cups chicken broth1 cup soy milk (can substitute regular milk)16 ounces Velveeta, cubed
1.  Brown the ground turkey and bacon on the stove top and drain the fat.  
2.  Pour the chicken broth into a 5 or 6 quart crockpot.  Then add the potatoes, garlic, ground turkey, and bacon.  Stir to combine.  
3.  Cover and cook on low for at least 5-6 hours.  20-30 minutes before serving add the soy milk and Velveeta and stir to combine.  If desired, serve with bread.
