Sweet and Salty Roasted Cauliflower

The first job I had when I moved to New York City was in a Sicilian restaurant in one of the neighborhoods without a name--somewhere between SoHo, Tribecca, and the West Village. There wasn't a lot of activity in that part of town, which meant the place didn't get much business. Despite the good food (and obviously wonderful employees...) the restaurant went out of business a few months after I started there.

I remember when I began my training all of the ingredients seeming incredibly exotic. As someone who just arrived from the small-town Midwest, I had to search for definitions of agnolotti, mortadella, bottarga, etc. just to begin to understand the menu. Prepping for that job opened up a whole new world of food for me and was the first step in knowledge and experience to get me to where I am today. It was also a jumping off place that led me to my next two jobs (the second of which I am still at today).

For all I learned there (and for the friends I made) it saddens me that I cannot go back and for a moment experience a few of the memories created there through the restaurant's food. Some days especially I think I would give anything for just one plate of the short rib agnolotti or the smoky tagine. But I can at least try to recreate a little of that world through the lens of my own kitchen.

One of the most interesting flavor combinations I came to learn while there is the combination of uber-salty fish like sardines or anchovies with a hint of something sweet, like dried fruit. There is something cloying about this duo that tantalizes your taste buds and leaves them crying for more. When paired here with slightly crisp roasted cauliflower it becomes a dish that would be lovely alongside herb-rubbed lamb or a hearty fish, but is just as nice for a simple lunch.

Sweet and Salty Roasted Cauliflower4-5 servings
1 large head cauliflower2-3 TB olive oil1/2 t. salt1/4 t. pepper2 TB capers1/8 c. toasted slivered almonds1/8 c. raisins
1 TB anchovy pastejuice of 1 lemon1/3 c. extra virgin olive oil
Preheat the oven to 400 degrees.Chop the cauliflower into 1 1/2" florets. Toss with the olive oil, salt and pepper. Spread into a single layer on a baking sheet and roast until tender and slightly browned, about 30 minutes. While the cauliflower is roasting, prepare the dressing. In a small bowl add the anchovy paste and lemon juice and whisk briskly while drizzling in the extra virgin olive oil. Once it has emulsified, set the dressing aside. After the cauliflower is roasted place in a medium bowl and toss with the capers, almonds and raisins. Add the dressing, stir, and then taste. Add salt and pepper if necessary and serve. This salad is just as good room temperature or chilled as it is warm.

What I've Been Up To

Been a bit of a drought here in posts lately. Feeling a little bogged down with the craziness of life (work, sister's upcoming wedding, friends in town), but have still been cooking! Lots of posts on the back-burner, but you can find a little of what I've been up to in a couple of other places.

The past couple of Pine Tar Press posts:
Cake Batter Crispy Treats

Tailgating Party Prep Tips
and Grilled Camembert Cheese

I also guest blogged for Everyday Desserts, featuring an open-faced sandwich of tomato bread with avocados and smoked paprika:

I also hosted Easter once again this year. Since I almost forgot about it and it creeped up on me pretty quickly we made it a pot-luck. I prepared a boneless lamb leg roast (with rosemary, garlic and orange zest), a vegan quinoa and beet salad (from one of my favorite blogs, Sprouted Kitchen), a couple of side salads, and a few appetizers (including David Lebovitz's Fig and Olive Tapenade). Friends brought an amazing array of cheeses, meats, homemade bread and beer, potatoes, vegetables, wines. It was a spread to be proud of.
Lots of laughs to be had.

Will soon be back with new recipes, stay tuned!

Strawberry Blueberry Mini Cheesecake Trifle

One of my favorite things about summer is the availability of delicious, fresh fruit!  Fruit is such a beautiful accent to many desserts, and in the case of these red, white and blue trifles, fruit is the perfect way to add color!  I was recently supplied with some gorgeous, organic berries from Whole Foods Market and my mind was overflowing with dessert ideas!  I settled on this fluffy, no-bake cheesecake (from my Cherries on a Cloud recipe) as the perfect complement to the beautiful berries.

Mini Cheesecake Trifle

This fluffy, no-bake cheesecake dessert is simple to prepare, and is delicious accompanied by fresh berries.

Yield: 6-7 Mini Desserts, or 4-5 moderate sized desserts

Ingredients:

Graham Cracker Crumble
1 1/2 cups graham cracker crumbs (about 10 full sized crackers)
1/3 cup butter, melted
1 Tablespoon sugar

Fluffy Cheesecake
1- 8oz block cream cheese
1/2 cup powdered sugar
2 teaspoons fresh lemon juice
2 tablespoons milk (any fat content)
2 cups cool whip, or freshly whipped cream

Fresh berries (strawberries and blueberries shown)

Directions:

Graham Cracker Crumble
Crush crackers in a large ziplock type bag. Pour crumbs, sugar and melted butter into a bowl and stir until fully combined. Pour into a 9″x13″ casserole dish and press into a even layer. Bake at 350*F for 10-12 minutes, until light brown. Allow to cool.

Fluffy Cheesecake
1. Beat cream cheese in the bowl of an electric mixer until smooth. Add powdered sugar, beat to combine. Add lemon juice and beat until fully incorporated. Add milk, and combine.
2. Fold cool whip or feshly whipped cream into cream cheese mixture. Spoon into dessert dishes, or for smaller dishes, fill a large piping bag and pipe into dessert dishes.

Dessert Assembly
To create the dessert as shown, layer a spoonful of graham cracker crumble, then a layer of cheesecake, fresh chopped strawberries, more cheesecake, fresh blueberries, and a final layer of cheesecake.

Recipe source- Glorious Treats (based on Cherries on a Cloud)

Note- Using the proportions listed above, you will likely end up with extra graham cracker crumble. Store the remaning crumble in an airtight container up to a month.

Notes~

The desserts shown are in 5 oz juice glasses (from my local grocery store).

In place of Cool Whip I used an all natural version I discovered at Whole Foods Market,  Truwhip, and was very happy with it!

Watermelon Krispie Treats

Eating outdoors, enjoying picnics and BBQ’s with family and friends is always one of the highlights of my summer.  When planning food (or dessert) for a picnic or BBQ, I need treats that travel well, can handle being left out in the heat, and are easy to eat.  Rice Krispies Treats are an ever popular option for casual summer events.  I love “fancy” rice krispies treats and am always on the lookout for creative and delicious variations.  Last summer, I bookmarked these adorable Watermelon Rice Krispies Treats by Dine and Dish and I’ve been waiting for an opportunity to give them a try.  This past weekend, we headed out of town for a family reunion and these cute rice krispies treats were the perfect dessert to bring along.  I placed them on the dessert table and all the kids made a bee-line right for them!  These are quite easy to make, and will draw lots of oohs and ahhs!

Watermelon Krispie Treats

These cute treats are perfect for summer get togethers

Yield: 16-18 slices

Ingredients:

For the green (rind) outer ring-
4 cups Rice Krispies cereal
4 cups mini mashmallows
3 Tablespoons butter
green food coloring

For the red (watermelon) center-
5 cups Rice Krispies cereal
5 cups mini marshmallows
3 Tablespoons butter
red food coloring

Chocolate covered sunflower seeds, or mini chocolate chips

Directions:

Prepare 2- 8" cake pans by greasing with butter or non-stick spray.

Make the green (rind)-
Add 4 cups rice krispies to a large bowl, set aside.
Melt 4 cups marshmallows and 3 tablespoons butter in a large bowl in the microwave about 2 minutes, or until very puffy.
Carefully remove from microwave, stir, and add in green coloring.
Pour green marshmallow mixture over the bowl of rice krispies. Stir mixture together, quickly, using a buttered spatula.
Working quickly, divide the mixture between the two prepared cake pans, and press along the sides of the pans, creating a ring about 1.5 inches tall and 1-1.5 inches wide/thick. Rub a bit of butter on your hands as necessary, to prevent the mixture from sticking to your hands.

Make the red (watermelon) center-
Repeat as above, using the ingredients listed (left).
Press red mixture into the center of the two cake pans, press down and smoothign the top surface with a buttered spatula.

Add "seeds"
I added chocolate covered sunflower seeds, using a tiny bit of melted chocolate to keep each seed in place.

Recipe Source- Adapted from Kellogs Rice Krispies
Idea Source- Dine and Dish

(shared with permission)

Notes- I used the microwave to melt the marshmallows, but of course feel free to melt the butter and marshmallows on the stove top if you wish.
For the coloring- I used 1 drop of Americolor gel in Mint Green for the "rind", and 2 drops of Americolor gel in Super Red for the "watermelon"

Assembly- Press the green “rind” around outside edge of a prepared cake pan, then make up the red “watermelon” mixture and press it into the center of the pans.

The original idea source, Dine and Dish, used flavored drink mix in the mixture to add watermelon flavor, to match the watermelon look.  I didn’t try that this time, but I think it’s a fun idea!

I added some “watermelon slices” onto pretty paper straws (first creating a hole using a wooden skewer).  I loved the look of them on the straws and think these would made adorable favors or take-home treats, wrapped in cellophane bags, and tied at the base of the watermelon.

Happy Summer!
