Chicken Parmesan Burgers

To contact us Click HERE

I really like Chicken Parmesan and I like to find all different types of ways to make it.  I have made Baked Chicken Parmesan and Chicken Parmesan Quesadillas.  For summer I thought it would be a great idea to make a Chicken Parmesan Burger.  We made these on toasted ciabatta bread, but any type of bread or roll can be used.
These burgers tasted very good, they tasted like chicken parmesan, but in a form that is perfect for summer picnics and parties.  This would be great to serve at any summer party, including a 4th of July party.  I hope that you really enjoy these burgers. I can't wait to make them again!

Chicken Parmesan Burgers
1 pound ground chicken1/3 cup marinara sauce1/2 tablespoon garlic powder1/4 teaspoon parsley1/2 cup bread crumbs1/8 cup parmesan cheese1/4 cup mozzarella cheeseCiabatta bread or rolls
1.  Mix the chicken, seasonings, bread crumbs, and cheeses together in a large bowl, until they are combined.  Form 4 equal patties.
2.  Grill the burgers for about 5 minutes on each side or until chicken has an internal temperature of 160 degrees.
3.  Meanwhile, sprinkle olive oil on each side of the ciabatta bread and toast on the grill for 2-3 minutes.
4.  Once the burgers are done top with more mozzarella cheese and marinara sauce.

Patriotic Pretzel Hugs

We just got back from our trip to the Outer Banks yesterday.  It was my son's first time at the beach and he wasn't so sure about the ocean.  We all had such a great time during our trip. I made these Pretzel Hugs during our trip and they were devoured pretty quickly.
These are a great and easy snack or dessert for the 4th of July.  I really like the flavor that the white chocolate in the Hugs give to this treat.  I picked out the red and blue M&Ms to make this a patriotic themed snack.  I love how easy these are to make.  I hope that you enjoy them!

2.  Place the pretzels on an ungreased cookie sheet.  Place a Hug on top of each pretzel.

3.  Bake the pretzels for 2-3 minutes or until the chocolate softens.

4.  Once you remove form the oven gently place a Red or Blue M&M on top of the Hug.  Then cool and serve.  To cool faster refrigerate the pretzel kisses.

Mango Barbecued Chicken

To contact us Click HERE

During the summer we love to grill and we try to grill at least once a week.  I am always looking for new recipes to try on the grill.  When I saw the recipe for this Mango Barbecued Chicken, I knew I had to try it.  I really liked the addition of the mango in the barbecue sauce.  It gave it a really great flavor.
The sauce tasted great and was really easy to make.  We set some aside and heated it up to make a dipping sauce for the chicken. This is a great variation of cooking chicken on the grill.  I really loved the sauce.  I can't wait to make this again!

Mango Barbecued Chicken(Recipe adapted from food.com)
6 bone-in chicken breasts (boneless chicken breasts can also be used)1 large mango, chopped3 tablespoons apple cider vinegar2 tablespoons dark brown sugar1 teaspoon garlic powder1/4 cup ketchup
1.  Combine the chopped mango, apple cider vinegar, brown sugar, garlic powder, and ketchup in a blender and blend until smooth.
2.  Set some sauce aside and then brush the chicken with the barbecue sauce.  Grill over medium heat until the chicken is fully cooked, basting the chicken with the sauce as it cooks.
3.  Simmer the extra sauce and then use as a dipping sauce.

Oatmeal Butterscotch Cookies - 2 Maids a Baking

To contact us Click HERE
I forgot how much I love butterscotch cookies, folks.
These have to be my second favorite cookie, right behind oatmeal chocolate chip!
Besides, since it has oatmeal it is totally considered a breakfast food!

Start by creaming your butter and sugars.

Add your eggs and vanilla.

Then add your dry ingredients and mix until blended.

Next comes your oatmeal.

Stir in the chips by hand.

Scoop and bake!

Remember you can freeze your cookie dough, visit here to find out how.

Oatmeal Butterscotch Cookies:
3/4 cup (1-1/2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick-cooking or regular rolled oats, uncooked
1-3/4 cups (11-oz. pkg.) butterscotch chips

Preheat oven to 350 degrees. Beat butter, granulated sugar and brown sugar in large bowl until well blended. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt; gradually add to butter mixture, beating until well blended. Stir in oats and butterscotch chips; mix well. Drop by heaping teaspoons onto cookie sheet. Bake 10 to 15 minutes or until edges are just golden brown, do not over bake. Cool slightly; remove from cookie sheet to wire rack.

I can't wait to see what you have created lately.

Billie's Italian Cream Cake from the PW

To contact us Click HERE
We are surrounded by mother's and grandmothers that just love coconut. So, when I stumbled on this recipe for Italian Cream Cake I knew it would be perfect for our Mother's Day dessert!

Start by separating your eggs.

Beat egg whites until stiff.

Grease and flour your cake pans.

Cream butter, oil and sugar together.

Add egg yolks, vanilla and coconut.

Mix all dry ingredients together.

Alternate adding dry ingredients and buttermilk until just combined.

Fold in egg whites.

I usually measure out my batter so each layer will be even.

Bake.

While the cakes are baking, whip up your frosting. Combine softened cream cheese, butter, vanilla and powdered sugar. Beat until light and fluffy. Add walnuts and coconut and stir gently.

Spread icing between layers.

Enjoy!

Italian Cream Cake:From the Pioneer Woman1 stick Butter1 cup Vegetable Oil1 cup Sugar5 whole Eggs, Separated3 teaspoons Vanilla1 cup Coconut 2 cups All-purpose Flour1 teaspoon Baking Soda1 teaspoon Baking Powder1 cup Buttermilk
Frosting:2 packages (8 Oz) Cream Cheese1 stick Butter2 teaspoons Vanilla1 package 2 Lb Powdered Sugar1 cup Chopped Walnuts1 cup Sweetened, Flaked Coconut

Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans (the next time I make this I will use 8-inch pans for a thicker layer). Beat egg whites until stiff, eet aside.

For the cake, cream together butter, oil, and sugar until light and fluffy. Mix in the egg yolks, vanilla, and coconut. In a separate bowl, mix flour, baking soda, and baking powder.Alternate buttermilk and dry ingredients to wet ingredients. Mix until just combined, then fold in egg whites.Pour evenly into prepared pans, sprinkle the top of each pan with 1 (at least) tablespoon sugar. Bake in preheated oven for 20 to 25 minutes, or until toothpick comes out clean. Remove from oven and allow to cool for 15 minutes, then turn the cakes out onto cooling racks and allow to cool completely.

For the frosting, combine cream cheese, butter, vanilla, and powdered sugar. Beat until light and fluffy. Stir in chopped walnuts and coconut. Spread between layers and serve. If the frosting is at room temperature it will be much easier to spread between the layers.

Can't wait to see what you baked recently!
